In 1968 she moved to Tasmania to join the CSIRO Division of Food Preservation, Tasmanian Regional Laboratory, being placed in charge of the group which specialised in fish and shellfish in 1969. This group (later renamed the Seafood Technology Section) was led by Olley until her official retirement in 1989 as Senior Principal Research Scientist.
