J. E. Sharkey was sometime manager of the Kraft factory at Drouin in Victoria. In 1941 he proposed the installation of a perforated trommel to 'work' the cheese curd mechanically and so to expel the whey. This was the beginning of mechanisation of cheese making in Australia. In the 1960s he devised a cheddaring machine using gravity feed from a tower of star-shaped section to cause the curd to flow and thus to form the desired texture. |
