Peter Munro Linklater, of the University of New South Wales, worked on cheese starters. He developed a new system of cheese factory control. Starter activity is measured at the beginning of each day, and temperature and pH are measured by vat probes and fed to a dedicated mini-computer which gives the cheesemaker complete control over his factory's perfomance, resulting in a relatively constant curd moisture. |
